How to look like you know what you’re doing in Costco: buy the picanhas.

I went in looking for jerky beef and came out with a project.
Buy what looks good.
$5.99/lb for well-marbled choice beef that’s verging on prime.
Same price as chuck roast with a lot more flavor and versatility.
Same familiar, steaky taste of ribeye/striploin, and I’m not going to feel bad when I make half of it into really fatty meatball grind and sear the shit out of those little balls.
Don’t feel bad for them. They’re asking for it.
I cut 6 steaks from the best sections and cubed the rest for grind.
Render the fat caps starting in a cold pan. Gives the caps a head start and provides the cooking fat all in one.
Hard sear for about 4 min per side on these thick boys and we left them a little more rare than I usually cook my steaks. More tenderness forgiveness on a cheaper cut.
Eat straight from the cutting board like an adult.
